Epirus Lazy Cheese and Yogurt Pie - Greek

2 cups greek-style yogurt, whole milk -- drained, preferably sheep's milk
2 large eggs -- lightly beaten
1 1/2 cups water -- to 2 cups, if needed
2 tablespoons unsalted butter -- melted
2 1/2 cups crumbled Greek feta cheese
2 cups all purpose flour -- to 2 1/2 cups, as needed
1/4 cup milk
3 tablespoons extra-virgin olive oil
Preheat the oven to 325F.
In a large bowl, combine the yogurt, eggs, and 1 1/2 cups of the water. Mix in the melted butter. Add 1 1/2 cups of the feta and then add about 2 cups of the flour. Stir well to combine. The mixture should have the consistency of a thick batter. Add more flour or water, if necessary, to achieve the proper consistency.
Rub a 12-by-18-inch baking pan with butter. Pour the batter into the pan and spread evenly with a spatula. In a small bowl, combine the remaining 1 cup feta with the milk and olive oil and pour this evenly over the surface of the pie. Place the pan on the center rack and bake until set and golden, about 1 hour and 10 minutes. Remove from the oven and cut into serving pieces.
Makes 24 3-inch pieces
