1 tablespoon Dijon mustard
1 egg yolk -- or 1/2 avocado, chopped
3 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
Salt and pepper to taste
Combine all the ingredients and blend in a high speed blender until smooth.
MAKES: 1/2 CUP (4 two-tablespoon servings)
Chupa Note: The author gives us the option of making this recipe vegan by using avocado, instead of the classic egg yolk base.
