Cauliflower Puffs - 1.5g Carbs, 0.5g Sugar

2 cups cauliflower, steamed
2 large eggs, well beaten
1/2 cup cottage cheese OR ricotta cheese
1/4 cup chives, chopped
Salt, to taste
Pepper, to taste
Preheat oven to 350 degrees F.
Puree cauliflower using an immersion blender, food processor, or traditional blender.
In a large bowl, mix cauliflower puree with cheese, chives, salt and pepper. Add eggs.
Spray 12 cup muffing pan with cooking spray. Spoon mixture into cups, filling each no more than 2/3 full.
Bake for 30 minutes until brown.
