3 cups cauliflower, cut into florets
3 cups pumpkin, peeled, de-seeded and cut into 1-inch cubed
1 onion, peeled and chopped
2 garlic cloves, peeled and crushed
1 small knob ginger, grated
1 tsp cumin
1 tsp coriander
1 tsp turmeric
2 green chilies, de-seeded and finely chopped
3 cups water
1 tsp tomato paste, no salt added
1. In a 4-quart (3.8 liter) slow cooker, combine cauliflower, pumpkin, onion, garlic, ginger, spices, chilies, water, tomato paste, salt and pepper.
2. Cover and cook on high for 4 - 4 1/2 hours.
