Broiled Asian Halibut
1 pound halibut steaks or fillets
1/4 cup canola oil
2 tablespoons fresh lemon juice
1 teaspoon dried tarragon
2 teaspoons soy sauce
fresh ground black pepper
Preheat broiler. Put a layer of aluminum foil over your broiler pan; spray
with vegetable oil spray. Put halibut on foil. Combine other ingredients
and brush over fish. Broil 5 to 6 minutes.
Turn fish over and brush the mixture over. Broil another 5 to 6 minutes
until flaky.
Makes 4 servings.
