2 Tablespoons Extra Virgin Olive Oil
1 medium onion -- diced
1 medium carrot -- diced
1 medium red bell pepper -- diced
7/8 ounces Sliced Shiitake Mushrooms -- 1 package
7/8 ounces Maitake Mushrooms -- 1 package
25 ounces Spaghetti Sauce -- 1 jar - No Salt
14 1/2 ounces Diced Tomatoes -- do not drain
1/2 teaspoon dried basil
1 cup water
2 teaspoons Shoyu Soy Sauce -- optional
Heat the oil in a medium sauce pan and sauté the onions for 1 to 2
minutes. Add carrot and bell pepper. Sauté 3 minutes. Add all remaining
ingredients except the shoyu. Cover and simmer 15 to 20 minutes. Add shoyu
and simmer 5 minutes.
