Slow Cooker Spelt Pilaf with Mushrooms- 4g Carbs, Trace Fiber

3 cups spelt -- farro, or wheat berries
8 ounces sliced white button mushrooms
1/2 cup finely chopped shallots
6 cups vegetarian 'beef'-flavored broth
Salt and freshly ground black pepper -- to taste
1/2 cup heavy cream
1/2 cup freshly grated Parmigiano-Reggiano cheese

Combine the spelt, mushrooms, shallots, broth, and salt and pepper to
taste in a large slow cooker. Cover and cook on high for 2 hours, or until the spelt is tender and the liquid is absorbed.

Uncover and stir in the cream and Parmesan. Taste for seasoning. Serve
hot.

Serve: 8 to 10

Chupa Note: gently warm the cream so it doesn't chill down the pilaf. I used wheat berries and portobellos.
