Grilled Chicken With Watermelon-Feta Salad - 13g Carbs, 3g Fiber

4 cups seedless watermelon, in 1/2-inch dice
1/2 cup thinly sliced red onion
1/4 cup parsley, chopped
1/2 cup crumbled feta cheese
1 pound boneless chicken breasts, pounded to 1/4-inch thickness
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper

Coat the rack of the grill or broiler pan with cooking spray. (To fashion a more grill-like rack for your broiler pan, use a roasting rack, or baker's rack, set inside the broiler pan and coat that with spray). Preheat the grill or oven.

Combine the watermelon, onion, parsley and feta in a bowl and toss
thoroughly. Let the salad sit at room temperature while you cook the
chicken.

Brush both sides of the chicken with the olive oil and sprinkle with salt and pepper. Grill or broil 5 to 6 minutes on each side, or until cooked through.

Serve the grilled chicken alongside the watermelon salad.
