[Healthy_Recipes_For_Diabetic_Friends] Replacing the potato in clam chowder with broccoli/cauliflower stem

I love clam chowder, but the potatoes make it difficult (I'm very sensitive to the carbs in potatoes). When I cook with broccoli or cauliflower it trim off the stems. I trim off the tough outer parts, cut it into a dice, and put it in a plastic bag in the freezer. When I make clam chowder I substitute this diced broccoli and/or cauliflower for the potato for a lower carb version of clam chowder.
