Three Onion Sauce

1 1/2 cup chopped leeks -- cleaned and sliced
1 1/2 cup fresh chopped red onion
6 medium shallots -- sliced
3 tablespoons olive oil
1/4 cup white all purpose flour
14 1/2 ounces low sodium vegetable broth
1/4 teaspoon thyme -- leaves, ground
1/2 teaspoon salt
1/4 teaspoon black pepper
Cook leeks, onions, and shallots, in oil, in a pot for 2 to 3 minutes. Lower heat to medium-low and slowly cook 20 to 25 minutes or until vegetables are lightly browned. Whisk in flour and cook over medium heat 1 to 2 minutes.
Mix in broth, thyme, salt, and pepper and bring to a boil. Continue boiling, whisking continually 1 to 2 minutes or until thick.
Serves 4
A slow cooked sweet caramelized onion sauce. This sauce is great over rice and vegetables or chicken.
