MEXICAN CABBAGE - 25.8g Carbs, 6.2g Fiber, 6.2g Sugar

  Amount  Measure       Ingredient -- Preparation Method

  2        tablespoons  oil
  4                     potatoes -- scrubbed and cut into bite size pieces (4 to 5)
  1              large  onion -- chopped
  2             cloves  garlic -- minced
  1             medium  head of cabbage -- chopped
  2       (14 1/2 oz.) cans  fat-free chicken broth
  1       (10 oz.) can  diced tomatoes with green chilies -- (Rotel)
  1       (14 oz.) can  diced tomatoes
  1                     chipotle pepper in adobe sauce
                        salt and pepper

1.  Heat oil in large saucepan or Dutch oven.  Add potatoes, onion and garlic.

2.  Cook until onions are translucent and potatoes are just beginning to get tender.  Add remaining ingredients and simmer until cabbage is tender.
