Chicken Meat Balls - 4.5g Carbs, 1.1g Fiber, 2.1g Sugar

2 1/2 lb chicken, ground
2 zucchini, grated
1 sweet potato, grated
2 handfuls spinach
1 (12 oz jar) roasted red peppers
2 cloves garlic
Sea Salt
Pepper
2 eggs
1/4 cup almond meal

1. Place spinach, red peppers, and garlic in a food processor.

2. Mix zucchini and sweet potato in spinach mixture.

3. Add ground chicken, eggs, salt, pepper, and almond meal to spinach mixture then with your hands.

4. Roll into meatballs and place on a baking sheet.

5. Cover with foil and bake for 45 - 60 minutes.
