Creamy Artichoke Dip - 16g Carbs, 5g Fiber

1 scant cup raw cashews
2 (14 oz cans) artichoke hearts, drained and chopped
2 (10oz boxes) frozen spinach, defrosted and chopped
1 Tbsp coconut oil
1 medium onion, diced
1 Tbsp garlic, minced
1 Tbsp lemon juice
1 tsp salt
1/2 tsp onion powder
1/2 tsp garlic powder

1. Cover the cashews in water and soak for 4 hours.

2. Drain the cashews and place them in a food processor with 1 cup fresh water.

3. Blend until smooth and well combined - this may take several minutes. Set aside.

4. Heat the oil in a skillet over medium heat.

5. Add the garlic and cook for 1 minute.

6. Stir in the onions and cook for about 8 minutes until tender.

7. Add the artichokes and spices and cook until heated through.

8. Stir in the spinach and lemon juice and heat through.

9. Add the creamed cashews and serve warm.
