Crispy Almond Chicken - 8g Carbs, 2g Fiber, 1g Sugar

Give ho-hum breaded chicken a nutty makeover by using flavorful ground
almonds instead of bread crumbs.

Preparation time: 10 min
Total time: 30 min
Servings: 4

1 lb (450 g) chicken tenders
1/4 tsp salt and pepper
1/4 cup all-purpose flour
1 egg
3/4 cup ground almonds
1 tsp dried Italian herb seasoning
2 tsp vegetable oil

Sprinkle chicken with salt and pepper. Place flour in shallow dish; beat
egg in second shallow dish. In third dish, stir almonds with Italian
seasoning.

Dredge chicken in flour, shaking off excess. Dip into egg, letting excess
drip off. Dredge in almond mixture, pressing to adhere. Arrange on parchment
paper–lined baking sheet; drizzle with oil. Bake in 400 degrees F
(200 degrees C) oven, turning once, until no longer pink inside, 15 to
18 minutes.
