The Melting Pot Spinach Artichoke Cheese Fondue - 8.3g Carbs, 2.9g Fiber, 2.4g Sugar

5 oz low sodium vegetable broth
3 oz chopped cooked spinach
3 oz chopped artichoke hearts
1 Tbsp minced garlic
8 oz shredded cheddar cheese
2 1/2 oz Fontina cheese
1 tsp grated Parmesan cheese
1 cracked black pepper (5 turns )
1/2 cup cauliflower
1/2 cup carrots
1/2 cup celery
1/2 cup broccoli
3 cups pumpernickel bread, cubed

Heat vegetable broth in the fondue pot.

When hot add spinach, artichoke hearts, and garlic and mix well.

Shred the cheese, then toss with flour.

Combine the cheddar cheese and Fontina cheeses and add a little at a time to spinach artichoke mixture. Stir until combined.

Stir in Parmesan cheese and a dash of Tabasco sauce.

Serve with bread or vegetables.
