As a tribute to Cleanse America - a 10-Day Raw Food & Juice cleanse that begins tomorrow, I'm sharing one of the recipes from our last recipe guide with you today!

Kicked Up Chili
--> For the sauce base
2 cups tomato, chopped
½ cup red bell pepper, chopped
½ cup orange juice
½ cup chopped scallions
½ cup sun-dried tomatoes, soaked
Small handful cilantro leaves
½ tsp fresh oregano
1 Medjool date, pitted
½ lime, juiced
½ avocado
Sea salt
Chili powder
Combine all ingredients in a blender until well incorporated. Taste and add salt & chili powder according to your liking. Next add in the "meat."
--> For the "meat"
1 cup mushrooms, chopped
½ cup tomatoes, diced
½ cup red bell pepper, diced
¼ cup zucchini, diced
¼ cup fresh corn kernels
Stir together all ingredients in a large mixing bowl. Pour into individual serving bowls and top with avocado slices and fresh cilantro.
