[Healthy_Recipes_For_Diabetic_Friends] Spanish Bean Omelet

 

Spanish Bean Omelet

8 eggs
1/3 cup water
1 cup refried beans, warmed
1/4 cup chopped onion
1/2 cup shredded Mexican cheese blend
1/4 cup Tbsp salsa

Whisk eggs and water. Heat a skillet, coated with cooking spray.

Add 1/4 of the egg mixture to skillet. When eggs are set, spoon 1/4 of
the beans and 1 Tbsp onion on one side, sprinkle with 1 Tbsp cheese,
fold other side over filling.

Slide omelet onto a plate. Repeat. Garnish with 1 Tbsp salsa and 1 Tbsp
cheese.

Makes: 4 servings
