Roasted Cauliflower with Bacon and Garlic - 4.9g Carbs, 1.8g Fiber, 1.6g Sugar

This cauliflower would also do well as part of a composed salad. It is flavorful enough to stand on its own but also sings beautifully when accompanied by a fine homemade dressing. Consider this as lunch bag fare. It is not messy, but it could have a small container of dressing for a dip.
1 head cauliflower
4 cloves garlic, finely minced
3 Tbsp olive oil (or your favorite oil that can withstand 325 degrees)
1 tsp sea salt (Omitted for Nutrition)
1/2 tsp freshly ground pepper
4 slices bacon, cut into bite-sized pieces
Wash the cauliflower and cut it into small pieces, about bite size. Place the cauliflower pieces in a bowl and toss with the olive oil, garlic, salt and pepper.
Arrange the bacon pieces across a cookie sheet with sides.
Arrange the cauliflower over the bacon. The cauliflower should be in a single layer, not crowded or sitting on top of one another.
Bake in a 325 degree oven for about 35 minutes. Toss the cauliflower a bit and check for doneness. If it is still a bit under-cooked for you, try another 3-4 minutes in the oven and check again.
Toss the ingredients of the pan well to fully coat the cauliflower with the oil from the bottom. Serve hot or at room temperature.
