Creamy Avocado Gazpacho - 16g Carbs, 7g Fiber, 3g Sugar

3 avocados, ripe, pitted and chopped
2 cups organic vegetable broth
1/2 small red onion, diced
1/4 cup fresh cilantro, chopped
2 Tbsp fresh lemon juice
1 tsp salt
1 cup unsweetened coconut milk
1. Place all of the ingredients aside from the coconut milk in a food processor or blender.
2. Blend until creamy then pour in to a serving bowl.
3. Cover the bowl and chill until cold, about 3 to 5 hours.
4. Whisk in the coconut milk and serve immediately.
