Garlic Citrus Chicken - 1.5g Carbs

Prep Time: 45 min
Servings: 4

3 lb chicken thighs and drumsticks
1/4 cup coconut oil, divided
1 Tbsp minced garlic
1 Tbsp lemon zest
1 Tbsp lime zest
1 cup low sodium chicken broth
Salt, to taste
Pepper, to taste

1. Rinse the chicken and pat dry then season with salt and pepper to
taste.

2. Heat about 2 tbsp. coconut oil in a large skillet over medium-high
heat.

3. Add the chicken and cook for 2 to 3 minutes on each side until
browned. Set the chicken aside on a plate.

4. Add the garlic, lemon zest and lime zest and cook for 1 minute,
stirring often.

5. Pour in the chicken broth and stir for 1 minute.

6. Add the chicken back to the skillet then cover and cook for 25 to 35
minutes until the chicken reaches an internal temperature of at least
170°F.

7. Remove the chicken to a serving plate and whisk the remaining 2 Tbsp
coconut oil into the skillet then serve the sauce over the chicken
