Re: [Healthy_Recipes_For_Diabetic_Friends] Mini Cheesecakes - 4.8g Carbs

Cheesecakes usually have some sort of crust. I don't see an ingredient for the crust in this. Has it gone missing?

Carol

p.s. What size scoop for the Stevia? Do you mean packets?

Quick to make and so simple. A great treat at any time! Serve with
cream or low-sugar ice cream for a special dessert.

8 oz Low fat cream cheese (220g tub)
2 Eggs
1 oz Fresh lemon juice (30mL)
2 tsp Vanilla
5 small scoops Stevia

1. Soften the cream cheese in the microwave. Alternatively, let stand
for a few hours until it reaches room temperature.

2. Place all ingredients in a bowl and blend using a hand blender or
beater.

3. Divide the mixture into four muffin tins.

4. Bake at 360 degrees F (180 deg C) for about 25 to 30 minutes.

5. Remove from tins and allow cheesecakes to cool. Serve chilled if
desired.
