Cabbage Rolls - 9.4g Carbs, 4.4g Fiber

This recipe for wrapped meatballs does take a little time to cook but it is well worth it for the superb taste. It's also an excellent way to get kids to eat and like

1 large organic cabbage
2 cups tomato sauce

For the Stuffing
1/2 cup fresh coconut milk (you can use heavy cream instead)
1/2 cup grated parmesan cheese
1/2 cup chopped, fresh parsley
1 clove garlic, minced
16 oz lean ground pork
1 tsp coarse sea salt
1 tsp fresh-ground pepper

1. Bring a large pot of salted water to a boil. Peel 12 large cabbage leaves then wash to clean. Blanch a few leaves at a time for about 1 minute in the boiling water, until they wilt and are soft, then spread them out on towels to cool until you're ready to put everything together.
For the Stuffing:
2. Place minced/ground pork in a large mixing bowl, add the parsley, parmesan, garlic, salt and black pepper - pour in the coconut milk and then mix everything well with a fork. Form the filling mixture into 12, 5cm or 2-inch balls.
Putting the Cabbage Rolls together:
3. Lay a softened cabbage leaf on a cutting board. Put the meatball in the center. Wrap the cabbage leaf around each ball and secure with a toothpick (use two, placed in an "x" if one isn't enough). Repeat this until you have all 12 made
Cooking the Sauce:
4. Pour the tomato sauce into a saucepan and add 1 cup of water.
Bring to a gentle boil over medium heat, stirring
occasionally to make sure it does not burn.
5. Gently add the rolled cabbages and cover the pan.
6. Leave on a low simmer for 20 minutes
7. Using a slotted spoon, lift each ball out in turn and carefully remove the toothpicks and turn the rolls over, place them back in the sauce and cook them for another 20 minutes. Remove the lid and simmer for another 15 minutes to thicken the sauce slightly the lid and simmer for another 15 minutes to thicken the sauce slightly.

Serving Instructions: Serve immediately with any of your favorite vegetables.
Chef's Tips: These are also very nice sliced and served cold with a homemade vinaigrette. Though do allow the tomato sauce to drain off before you put them on a serving plate.
