Chicken Parmesan - 9.7g Carbs, 2.1g Fiber, 4.9g Sugar

2 tsp canola oil
4 6 oz chicken breasts, boneless skinless
1 cup zucchini, diced
1/2 cup onions, sliced
1 1/2 cup pasta sauce
1 tsp dried Italian seasoning
1 cup mozzarella cheese, shredded     
1/2 cup parmesan cheese, grated

In a large non stick skillet; heat 1 teaspoon of oil over medium-high heat. Add chicken breasts and sear for 1 to 2 minutes per side or until golden brown. Transfer to greased baking dish.

Heat remaining oil in skillet. Add zucchini and onions; sauté for 3 to 5 minutes or until lightly browned. Remove from pan and place on top of chicken.

In a small bowl; blend together tomato sauce and seasonings; pour over chicken and vegetables. Sprinkle with cheeses. Bake in preheated 350 F oven for 25 to 30 minutes or until juices run clear when chicken is pierced with fork.
