                          Thai Bok Choy Delight

  1         Tablespoon  Dijon mustard
  1         Tablespoon  sweet red chili sauce
                        red pepper flakes
     1/2      teaspoon  ground ginger
  2        Tablespoons  low-sodium soy sauce
  1         Tablespoon  rice vinegar
  1              bunch  green onions
  6                     garlic cloves -- minced
  1              large  bok choy -- chopped
                        vegetable broth, low sodium -- as needed
  1           teaspoon  cornstarch -- mixed into 2 Tablespoons water (cornstarch slurry)
 
Line a skillet with a thin layer of water. Whisk in Dijon, chili sauce, a
pinch of red pepper flakes, ginger, soy sauce, and rice vinegar and set
aside.
 
Chop the rooty bottom off the green onions and discard. Reserve the dark
green parts for later and mince the white and light green parts. Add to a
skillet with garlic and saute over high heat until most of the liquid has
evaporated.
 
Add bok choy and a splash of broth (there should always be a thin layer of
liquid coating the skillet). Continue to cook, stirring constantly, until
bok choy is fork-tender but still crisp.
 
Add cornstarch slurry and allow to thicken. Toss to coat and garnish with
dark green onions.

Chef's Note: You can use 2-3 baby bok choy in place of the large bok choy.

beautifully. For a full meal, toss in cubed tofu or shelled edamame and
serve over cooked brown rice or quinoa.
