When battling fatigue, quick dips are a treasure. Keep a stash in the fridge so you can just open the door, grabs some veggies and pesto, and enjoy a healing snack. Or slather it on sandwiches, pasta and meats. Its flavor is mild, yet also subtly rich and complex, thanks to the shallots. All the ingredients help balance your blood sugar, thus providing you with a more stable supply of energy.

3 clove garlic, chopped
1/2 cup extra virgin olive oil
4 cups spinach fresh, packed
1/4 cup shallots, chopped
1/2 cup pine nuts
Combine all ingredients in a food processor and blend.
Season with sea salt and pepper to taste.
TIPS AND NOTES: Spinach has some big advantages over basil—it's affordable and it's almost always in season. Substitute walnuts for pine nuts to bring the price down even more, or add toasted sunflower or pumpkin seeds if you are allergic to nuts.
You can add Parmesan or a few basil leaves for more traditional pesto flavor, or jazz up the flavor with lemon juice and lemon zest.
Pesto freezes well as long as there is no Parmesan in the mix, so make a big batch, pop it in the freezer and enjoy it often! Ice cube trays covered with plastic make individual portions easy to access. Once the cubes are frozen, transfer them to a freezer bag or container.
