1 Tbsp Swanson Organic Organic Extra Virgin Olive Oil, Cold-Pressed
1 medium onion, diced
2 celery ribs, sliced
2 carrots, diced
2 parsnips, diced
2 (32 oz cartons) vegetable broth
2 Swanson Organic 100% Certified Organic Bay Leaves - Whole
1 can Eden Foods Diced Tomatoes with Basil, Organic
1 cup cabbage, diced
1 small zucchini, diced
1 cup Eden Foods Kamut Spirals, Organic 100% Whole Grain
1 can Eden Foods Kidney Beans (Dark Red), Organic
1 Tbsp Swanson Organic 100% Certified Organic Parsley Leaves
1/4 tsp Swanson Organic 100% Certified Organic Peppercorns Whole
1/4 tsp Swanson Organic 100% Certified Organic Garlic Powder

Peel, chop or slice all vegetables. In a large pot over medium heat,
saute oil, onions, celery and carrots until onion is translucent. Add
garlic and parsnips. Cook for another 5 minutes.

Add broth, tomatoes and bay leaves and bring to a boil. Add cabbage,
zucchini and pasta. Cook for 7 to 10 minutes.

Add beans and parsley. Bring to another boil and simmer for 15 to
20 minutes. Remove bay leaves and serve!
