Serving size: 1/2 cup
1 (7-oz) container hummus
1 cup coarsely chopped fresh baby spinach
1/2 cup chopped tomatoes
1/2 cup chopped cucumber
1/4 cup chopped red onion
1/4 cup crumbled reduced-fat feta cheese
2 Tbsp sliced kalamata or black olives
1. Spread the hummus on a 9-inch serving plate.
2. Sprinkle evenly with the remaining ingredients and refrigerate until
serving time.
Terrific Tidbit - -
Look for different containers of flavored hummus to give this recipe
extra punch. If you can't find this container size, just buy the bigger
one and use 7 ouncesthen serve the rest another day!
