In the effort of saving syllables, this chili lime chicken is something to spice up your kitchen again without using any complicated ingredients or methods.
Time: 8 hours
Yield: 1 6-lb chicken
1 6 lb chicken
1 tsp salt
1 tsp ground black pepper
1 Tbsp dried coriander
1 tsp ground cumin
1 tsp dried rosemary
1 Tbsp chili powder
1 Tbsp cayenne pepper
3 limes, zested and juiced
1 cup fresh cilantro
3 cloves garlic
1/3 cup olive oil
2 large carrots, peeled and chopped
1. In a small bowl, mix together salt, black pepper, coriander, cumin, rosemary, chili powder, and cayenne pepper. Take mixture and rub all over chicken and if possible, rub some under the skin.
2. In a food processor, add lime juice, lime zest, cilantro, garlic and olive oil. Pulse until mixture is smooth.
3. Place chicken in a large bowl. Pour mixture over chicken and using your hands , rub mixture all over the chicken. Cover and refrigerate overnight.
4. Place marinated chicken and remaining marinade in a slow cooker. Add in carrots. Cover and cook on low for 6 - 8 hours. Enjoy.
