Golden Scallion Gravy - 3g Carbs, 1g Fiber

1/2 cup vegetable broth, ready-to-serve
1/2 cup nondairy milk
2 green onions -- sliced
1 tablespoon nutritional yeast
1/2 teaspoon onion powder -- granulated
1/2 teaspoon garlic powder -- granulated
1/4 teaspoon Dijon mustard -- to 1/2 teaspoon
1 Tablespoon white whole wheat flour
Whisk all ingredients together and bring to a near boil. Once almost
boiling, reduce heat to low and simmer; stirring constantly for a minute or two, until the mixture thickens into a gravy. Add salt and pepper to taste and more dijon mustard, if desired. I am pretty generous with both salt and pepper; especially the black pepper, in this recipe.
Makes 1 cup; 4 one-quarter cup servings.
Per serving (about 1/4 cup): Calories 27 (21% fat cals); Total Fat 0.6g; Carbs 4.3g; Fiber 1.2g; Sugars 0.6g; Protein 1.8g.
Author Note: This gravy whips up quickly and is quite lovely with its rich golden coloring and little slices of green onion, making it perfect for family and holiday gatherings. It also goes with just about anything, but it really shines over mashed potatoes and green beans.
