Spinach Provencal - 14.2g Carbs, 5g Fiber, 3.2g Sugar

A wonderful way to serve spinach that even your kids will love. It has to be the cheese!

2 medium sweet onions, chopped
1 Tbsp minced garlic
2 Tbsp olive oil
2 bunches fresh spinach, stemmed and washed well
2 Tbsp butter
2 eggs, beaten
1 cup Parmesan cheese, divided, (I like fresh-grated)
Salt
Pepper

Heat olive oil in skillet. Add onions and garlic and saute until onions are translucent. Add spinach and cover tightly. Cook 2 minutes. Stir mixture well. Cook an additional 3 minutes.

While spinach is cooking, melt butter in slow cooker on low. After spinach is cooked remove from heat and allow to cool for 5 minutes.

Add eggs and 1/2 of Parmesan mix well. Season with salt and pepper.

Pour into slow cooker. Cover and cook on low for 1 hour. 15 minutes before serving add remaining ½ of Parmesan.

Serving Suggestion: This can be served as a side to baked chicken breasts or meatloaf.
