[Healthy_Recipes_For_Diabetic_Friends] 4-Ingredient Tomato Sauce - 10g Carbs, 2g Fiber

4-Ingredient Tomato Sauce - 10g Carbs, 2g Fiber

From: clevelandclinic.org - By Digestive Health Team
Fewer ingredients, more homemade flavor. Homemade tomato sauce is naturally low in fat and calories and is an excellent dietary source of Vitamin A, Vitamin C and potassium. Feel free to add fresh herbs to this simple recipe of wholesome tomatoes. This is a good way to add flavor if you would like to eliminate sodium. You can also add fresh roasted garlic and chopped fresh onion to sweeten and flavor the sauce.

28 oz can peeled plum tomatoes
5 Tbsp unsalted butter
1 small white onion, peeled and cut in half
Kosher salt (if desired)

To serve:
Shaved Parmesan cheese
Freshly ground black pepper

Put a 3-quart saucepan over medium-high heat.
Add the tomatoes, butter, onion halves and a pinch of salt.
Bring to a simmer then lower the heat.
Crush the tomatoes lightly with the back of a spoon as they cook, stirring occasionally.
Simmer very gently for 45 minutes, or until droplets of fat appear on the surface of the tomatoes.
Remove and discard the onion.

Serve over hot pasta with Parmesan and black pepper, if desired. Pasta not included in nutrition.

Easy Vegetable Tomato Soup - 17g Carbs, 5g Fiber, 7g Sugar

From: clevelandclinic.org - Recipe provided by Digestive Disease Health Team dietitians
Versatile recipe, full of veggie goodness. Soup is a great way to use leftover veggies.  Any vegetables you have on hand will work in this recipe so feel free to get creative! Use the half-empty bags of frozen vegetables, the last handful of baby carrots, or the leftover tomatoes you chopped for taco night. It's a party of flavors, and all veggies are welcome.

1/4 cup olive oil
2 cloves garlic, minced
2 sliced carrots
2 sliced celery stalks
1/2 medium onion, chopped
16 oz can whole tomatoes with juice
1 sliced zucchini
1 sliced yellow squash
2 cups edamame
1 cup broccoli
1 cup corn
6 cups low-sodium vegetable stock
Water as needed
1/2 teaspoon dried thyme
1/2 cup tomato paste
Salt and pepper to taste

Saute the onions, carrots, celery and garlic with olive oil in a large stockpot on medium heat.

Add salt and pepper and cook until vegetables are soft and translucent, approximately 5 minutes.

Mix 1/2 cup of stock, zucchini and squash. Simmer for 5 minutes until vegetables are soft.

Add remaining vegetables (corn, broccoli, edamame, tomatoes) and stock.  Bring to a simmer.

Stir in tomato paste until fully blended.

Cover and bring to a boil.

Reduce heat and simmer uncovered for approximately 15 minutes.

Add salt, pepper and thyme to taste.

Re: [Healthy_Recipes_For_Diabetic_Friends] Re: Green Smoothie Recipe?

This is a Vitamix recipe so I would think it is just to show you don't have to peel or de-seed anything to pulverize the stuff to make a smoothie. Mind you...you would have to eat an awful huge amount of apple seeds to poison yourself. I personally core the apple and I use my nutri bullet.

Ironically, if you just ate the seed whole, it would pass just through.
It's nature's way of assisting in the reproduction of apple trees
dropping the seed in a pile of fertilizer far from the parent tree. But
if the seed is mashed up, as would happen in the blender, the cyanide is
released. So what's the plus side of this equation?
