Indian Shrimp Curry - 7.8g Carbs

2 Tbsp canola oil
1 onion, chopped
2 garlic cloves, chopped
1 tsp grated ginger
1/2 tsp cumin powder
1 tsp turmeric powder
1/2 tsp chili powder
1 can diced tomatoes
1 can coconut milk
Salt and pepper, to taste
2 lb fresh shrimps, peeled and deveined
2 Tbsp cilantro
Heat the oil in a heavy pot. Add the onion and garlic and saute for two minutes then stir in the spices.
Add the tomatoes and coconut milk and bring to a boil.
Season with salt and pepper and cook for 15 minutes.
Add the shrimps and cook 10 additional minutes.
Serve the curry warm, topped with chopped cilantro.
