Bayou Cornbread - Vegan

1 cup nondairy milk -- soy
1 teaspoon lemon juice
1/2 cup coarse cornmeal
1/2 cup fine cornmeal
2 Tablespoons cornstarch
1 1/2 Tablespoons whole-wheat flour
2 teaspoons baking powder
1/4 teaspoon salt
Mix nondairy milk and lemon juice together and set aside for 10 minutes.
Meanwhile, in a mixing bowl, whisk cornmeals with cornstarch, flour,
baking powder, and salt (you can add more salt if you like a salty bread) until well combined.
Preheat the oven to 400F.
Grease an 8 or 9-inch pan or cast-iron skillet and put it into the oven to heat for a few minutes (this is how you crisp the sides to be golden).
Add nondairy milk to the cornmeal mixture and stir until well combined. Carefully remove hot pan from the oven and pour the batter straight in. Bake for 15 to 20 minutes, or until firm to the touch and golden.
Serves: 9
Chef's Note: gluten-free flour may be substituted for the whole-wheat
flour. Additionally, you can use another 1/2 cup of the fine cornmeal
instead of coarse, though, it's more authentic with little grainy corn
bits in the bread!
You can grind coarse cornmeal into a fine or finer cornmeal in your
blender.
Soy milk work best in this recipe, followed by almond milk.

Author Note: My sister, Courtney, found an old family recipe for Louisiana cornbread that I just had to veganize. In Louisiana, cornbread isn't traditionally sweetened since it's supposed to go with other foods like a plain cracker. This savory cornbread is great for nibbling and broken into NOLA Gumbo.
