Homemade Barbecue Sauce

1 tablespoon vegetable oil -- or olive oil (neutral-flavored)
1 onion -- finely chopped
28 ounces canned tomatoes -- (1 can) diced or pureed
1 cup ketchup
2/3 cup white vinegar
1/4 cup orange juice
1/4 cup dark brown sugar -- firmly packed
1 tablespoon chili powder
1 tablespoon paprika
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper -- or more to taste
In a skillet, saute the onions in the oil until lightly browned. Add the remaining ingredients and bring to a simmer. Cook for 15 minutes over low to medium heat.
Run the sauce through the food processor (or use an immersion blender) if you used diced tomatoes and you prefer a smooth sauce.
Refrigerate for up to 7 days or freeze for later use.
Makes 3 cups (12 one-quarter cup servings)
AuthorNote: We developed this recipe for the Barbecued [2Favorite] Pizza, but it's also great on ordinary cheese pizzas - it's a real change of pace. Once you start making your own barbecue sauce, it will be hard to go back to the jarred stuff.
