Leeks and Celery - 2g Carbs, 3g Fiber, 4g Sugar

1/2 cup extra virgin olive oil
1 lb celery, thinly
1 lb leeks (white part only), cut into thin rounds
1 large onion, chopped
1 cup grated tomatoes
1½ cups water
Salt and pepper, to taste
Nutmeg
1. Sauté celery and leeks in olive oil for 5 minutes.
2. Add the onion and tomatoes. Sauté for 5 minutes more.
3. Add water and simmer for 30 minutes. Add salt and pepper to taste.
4. Once finished, sprinkle (very lightly) with nutmeg.
