If you can't find a commercial one in the Asian aisle of your local
supermarket, you can easily make one with just a few common ingredients:
1/3 c. rice vinegar
1/4 c. low sodium soy sauce
2 tbsp. water
1 tsp. sesame oil
1/2 tsp. sesame seed
2/3 c. canola oil
Combine first 5 ingredients in jar with tight fitting lid and shake well.
Add oil and shake again. Chill until ready to serve. Makes about 1 1/2 cups.
If you prefer a sweeter dressing, add a packet or two of Splenda to taste.

Tasty salmon fillets with sweet pineapple salsa. Salmon is a great

Serving Size: 3 oz cooked fillet and about 1/2 cup salsa
4 4-oz salmon fillets, rinsed and patted dry
1/2 tsp dried thyme leaves
1 15.25-oz can pineapple tidbits, packed in juice, drained
1/2 cup finely chopped red bell pepper
1/4 cup finely chopped red onion
1 tsp grated ginger
0.13 tsp dried red pepper flakes (optional)
1. Line a baking sheet with foil, coat with cooking spray, and place

1 (6 oz can) water-packed albacore tuna
3/4 cup finely chopped Honeycrisp, Gala or Fuji apple
1/2 cup finely chopped green bell pepper
1/2 cup finely chopped scallions, green and white parts
2 Tbsp fresh lemon juice
Salt to taste
Ground black pepper
1 Tbsp canola oil
1/3 cup chopped fresh dill
2 tsp grated lemon zest
4 butter or Boston lettuce leaves
4 slices European cucumber
2 lightly packed cups watercress sprigs
In mixing bowl, finely flake tuna with fork. Mix in apple,
green pepper and scallions. Add lemon juice, salt and pepper
to taste, and toss to combine. Mix in canola oil. The salad
may be covered and refrigerated for up to 4 hours.
When ready to serve, mix in the dill and lemon zest. Line
2 salad plates each with 2 lettuce leaves and add 2 cucumber
slices. Mound one-half of the tuna salad on each plate.
Surround with the watercress sprigs, and serve.

1 ripe Fresh California Avocado, seeded, peeled and cut into 1/2-inch dice *
1/2 cup jarred roasted piquillo peppers, cut into 1/4-inch strips
1 clove garlic, minced
1 Tbsp extra virgin olive oil
2 tsp sherry vinegar
Salt, to taste
Freshly ground black pepper, to taste
8 eggs
1/2 cup grated Spanish manchego cheese **
2 Tbsp chopped Italian parsley
2 Tbsp extra virgin olive oil, for cooking
In a small mixing bowl, toss together avocado, peppers, garlic, oil,
vinegar, salt and pepper. Let marinate 30 minutes.
Preheat the oven to 400F.
In a separate bowl, whisk together eggs, cheese and parsley until
frothy. Season with salt and pepper, to taste. Stir in the avocado
mixture.
Heat oil in a 10-inch, nonstick, ovenproof skillet over medium-high
heat. Add the egg mixture, reduce heat to medium and cook for 7 to
8 minutes, until the bottom is set and the top is still runny.
Occasionally lift the outer edges so the uncooked egg can run underneath.
Place the skillet in the oven and cook until the eggs are set and
golden brown, 6 to 7 minutes.
Remove the skillet from the oven and loosen the bottom of the frittata
with a spatula. Place a serving plate over the skillet and invert the
frittata onto it. Cut into wedges and serve hot or at room temperature.
* Large avocados are recommended for this recipe. A large avocado
averages about 8 ounces. If using smaller or larger size avocados
adjust the quantity accordingly.
** Crumbled goat cheese may be substituted for Spanish manchego cheese.
