Fresh Spinach with Garlic-Yogurt Sauce

4 tablespoons olive oil -- divided

1/2 tablespoon tomato paste

1 1/2 pounds fresh spinach leaves -- (four 6-ounce bags), divided
1 1/2 tablespoons uncooked medium-grain white rice
2 garlic cloves
6 tablespoons plain Greek yogurt -- or drained plain whole-milk yogurt
1 tablespoon butter
1/2 teaspoon cayenne pepper

Heat 3 tablespoons oil in heavy large skillet over medium heat. Add onion and sauté until translucent, about 5 minutes. Add tomato paste; stir 1 minute. Add chiles and 1/3 of spinach. Cook until spinach wilts, adding remaining spinach in 2 additions and tossing often, about 4 minutes. Mix in rice. Cover and simmer until rice is tender and moisture from spinach is absorbed, adding water by tablespoonfuls if needed for rice, about 10 minutes. Uncover and continue to cook until mixture is dry, about 2 minutes; discard chiles.
Meanwhile, press garlic cloves into small bowl, stir in yogurt, and season with salt and pepper. Melt butter with 1 tablespoon oil in small skillet. Mix in cayenne and remove from heat.
Spread spinach mixture on platter; make indentations with back of spoon. Spoon yogurt into indentations and drizzle with cayenne butter.

6 servings

Here's a real treat for the lunch box. Cayenne pepper and chiles de arbol give this side a hit of flavor.

*Small, thin, very hot red chiles; available at some supermarkets and at Latin markets.

Yogurt Flatbreads with Barley and Mushrooms

Flatbreads:
1 cup whole wheat flour -- plus 2 teaspoons
1 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup Greek yogurt
3 tablespoons chopped fresh cilantro
4 tablespoons clarified butter -- or a mixture of melted butter and vegetable oil
Mushroom Ragout:
1/2 cup pearl barley
3/4 ounce dried porcini mushroom
3/4 cup lukewarm water
4 cups mixed shiitake and button mushrooms -- halved
2 tablespoons olive oil
5 tablespoons butter
2 sprigs fresh thyme
1 garlic clove -- crushed
1/2 cup white wine
salt and freshly ground black pepper
2 tablespoons chopped fresh parsley -- plus extra to garnish
1/2 tablespoon finely chopped preserved lemon
1 tablespoon lemon juice
6 tablespoons Greek yogurt

To make the flatbreads: Combine all the ingredients, apart from the butter, in a bowl and use your hands to mix them together to a dry dough; add more flour if needed. Knead the dough for a minute or so, until it is smooth and uniform. Wrap it in plastic wrap and chill it at least an hour.

To make the mushroom ragout: Rinse the barley with cold water, then place in a medium saucepan and cover with plenty of fresh water. Simmer for 30 to 35 minutes, or until al dente.

Place the porcini in a bowl and cover with lukewarm water; set aside. Put the fresh mushrooms in a heavy pan with the oil over medium-high heat, half the butter and the thyme, and saute for 4 minutes, stirring occasionally. Once the mushrooms have softened, add the garlic and wine and allow to bubble away for about 5 minutes.

Next, add the porcini and their soaking liquid, leaving behind any grit in the bowl, plus some salt and pepper. Simmer on low heat for about 10 minutes. Finally, stir in the remaining butter with the parsley, preserved lemon, lemon juice, and cooked barley. You will now have a flavorful mushroom stew with a thick sauce. Add more water if needed and taste for seasoning. Set aside; reheat before serving.

When ready to make the flatbreads, divide you dough into six pieces. Roll into balls, then flatten them with a rolling pin into round disks about 1/10-inch (2mm) thick. Heat some clarified butter in a nonstick pan and fry the flatbreads, one at a time, on a medium heat for about 2 minutes on each side, or until golden brown. Add more butter as you need it and keep the flatbreads warm as they are cooked.

To serve, fold each warm flatbread in half or into quarters and top with warm ragout, a spoonful of yogurt and a sprinkle of parsley.

Serves 6, as a starter

AuthorNote: This is a wonderfully soothing dish due to the smooth textures of the mushrooms and barley. As amazing as the flatbreads are, you don't have to make them if you are short of time. Rice or couscous will be a fine alternative.

in combination with fresh herbs and spices, they elevate this dish from
"everyday" to "ta-da!" Serve the tacos with reduced-fat sour cream.

2 plum tomatoes, cored
8 oz boneless, skinless chicken breast, trimmed of fat
1/4 tsp salt
1/8 tsp freshly ground pepper
2 tsp canola oil, divided
1/2 cup finely chopped white onion
1 clove garlic, minced
1 small jalapeno pepper, seeded and minced
2 tsp lime juice, plus lime wedges for garnish
2 tsp chopped fresh cilantro
2 scallions, chopped
6 small corn tortillas, heated (see Tip)

Heat a medium skillet over high heat until very hot. Add tomatoes and
cook, turning occasionally with tongs, until charred on all sides, 8
to 10 minutes. Transfer to a plate to cool slightly. Cut the tomatoes
in half crosswise; squeeze to discard seeds. Remove cores and chop
the remaining pulp and skin.

Cut chicken into 1-inch chunks; sprinkle with salt and pepper. Add
1 teaspoon oil to the pan and heat over high heat until very hot. Add
the chicken and cook, stirring occasionally, until it is browned and
no longer pink in the middle, 3 to 5 minutes. Transfer to a plate.

Reduce the heat to medium and add the remaining 1 teaspoon oil. Add
onion and cook, stirring, until softened, about 2 minutes. Add garlic
and jalapeno and cook, stirring, until fragrant, about 30 seconds.
Add lime juice, the chicken and tomatoes. Cook, stirring, until heated
through, 1 to 2 minutes. Stir in cilantro and scallions. Divide the
chicken mixture among tortillas. Serve with lime wedges.

1 large garlic clove -- peeled
1 cup mayonnaise
4 teaspoons fresh lemon juice
1/4 cup extra-virgin olive oil
1/4 cup za'atar -- (spice blend of wild thyme, sesame seeds, and salt)

With machine running, drop garlic through feed tube of processor and chop finely. Add mayonnaise and lemon juice. With machine running, drizzle in oil in thin stream, blending until smooth. Transfer to small bowl. Whisk in za'atar and season with salt and pepper. Let stand at least 30 minutes to allow flavors to develop. DO AHEAD Can be made 1 day ahead. Cover and chill. Bring to room temperature before using.

Makes about 1 1/3 cups (10 two tablespoon servings)

Za'atar is a Middle Eastern spice mix that includes sesame seeds, sumac, dried thyme, and dried marjoram. It's available at specialty foods stores and Middle Eastern markets and from adrianascaravan.com.

1 Whisk together mayonnaise, sour cream, garlic, and herbs until smooth. Chill until ready to use.

2 cups frozen edamame (shelled), cooked according to pkg directions (10oz pkg)
1/4 cup soybean oil
3 Tbsp lemon juice
2 tsp garlic, chopped
3/4 tsp cumin, ground
1/2 tsp salt

Puree edamame, oil, lemon juice, garlic, cumin and salt in food processor
for 30 seconds, scraping sides twice, until almost smooth. Cover and
refrigerate until ready to serve. Serve with pita triangles, crackers,
baguette or raw vegetables.

4 eggs OR 1 cup egg substitute
1/2 cup chopped fresh baby spinach

1. Combine eggs, spinach and tomato in medium bowl. Spray large
