Chocolate Coconut Meringues - 8g Carbs, 0g Fiber

These chocolate, coconut and almond meringue cookies are so light and airy, they are a perfect little treat that's not too heavy.
Nutrition Profile - - Diabetes appropriate | Low carbohydrate | Gluten free

Active Time: 25 minutes
Total Time: 3 hours
Makes: 30 cookies

4 large egg whites
1/4 tsp cream of tartar
1/4 tsp coconut extract or imitation coconut extract
1/4 tsp almond extract
1/4 tsp vanilla extract
1/8 tsp salt
1 cup sugar
1/4 cup unsweetened cocoa powder
2 Tbsp semisweet chocolate chips OR finely chopped chocolate
2 Tbsp trans-fat-free white chocolate chips OR
finely chopped white chocolate, such as Sunspire

Position racks in upper and lower thirds of oven; preheat to
250 degrees F. Line 2 large baking sheets with parchment paper
or nonstick baking mats.

Beat egg whites, cream of tartar, coconut, almond and vanilla
extracts and salt in a large bowl with an electric mixer on
medium-high speed until combined. Gradually beat in sugar,
2 tablespoons at a time, beating until stiff, shiny peaks
form, 6 to 8 minutes.

Sift cocoa over the mixture and gently fold together with a
rubber spatula until combined.

Spoon the meringue into a gallon-size sealable bag (or pastry
bag fitted with a 1/2-inch tip). Seal the bag, pressing out as
much air as possible. Cut a 1/2-inch hole in one corner of the
bag. Pipe the meringue into 2-inch circles, about 1 inch apart,
on the prepared baking sheets.

Bake on the upper and lower racks for 50 minutes. Turn off the
heat and let the meringues stand in the oven with the door
closed until completely dry, about 1 1/2 hours.

Melt semisweet and white chocolate (see Tip) and drizzle or
pipe onto the cooled meringues. Let stand until it sets.

Tips & Notes - -
Make Ahead Tip:
Store in an airtight container for up to 3 days. Some crispness
may be lost during storage.

Kitchen Tips:
To melt chocolate, place chocolate in a bowl and microwave on Medium
for 45 seconds. Stir; continue microwaving on Medium in 20-second
intervals until almost melted, stirring after each interval. Continue
stirring until completely melted. Or place in the top of a double
boiler over hot, but not boiling, water. Stir until melted.

To decorate cookies with melted chocolate, use a pastry bag fitted
with a fine writing tip to pipe the melted chocolate or dip tines of
a fork in chocolate and drizzle. You can improvise a pastry bag with
a small plastic bag. Add melted chocolate to the bag, cut a tiny hole
in one corner and squeeze the chocolate out.

Broiled or Grilled Wild Salmon with Blueberry Cilantro Salsa - 11.1g Carbs, 1.6g Fiber, 8.3g Sugar

BC Salmon Council, and could serve as an easy, tasty Thanksgiving
centerpiece.

Amy at the Minimally Invasive food blog picked it up from us, and
contributed this great photo of the dish served atop asparagus. We
like the idea of serving the salmon and salsa over greens (e.g.,
spinach or chard; cold or sauteed). It would also make sense to
serve this dish with whole grain on the side ... we'd serve it
either with quinoa or a mix of wild and "real" rice, with a sprinkle
of dried cranberries added during cooking for extra color, texture,
and flavor. To appeal to the broadest range of tastes, leave the
chopped cilantro, jalapeno, and onions out of the salsa, and instead
serve them on the side for folks to add to their salsa or not.

4 (6 oz each) wild salmon portions (sockeye, silver, or king) OR
one 24 oz sockeye fillet, cut into four 6 oz pieces
1/2 large pink grapefruit (sectioned with membrane removed), diced, OR
1/4 of a pineapple, diced
2 Tbsp red onion, chopped finely
1 jalapeno pepper, deveined and chopped (optional)
1 tsp honey
1 Tbsp lime juice
1 cup wild organic blueberries, thawed
2 Tbsp chopped fresh cilantro (or parsley)
Sea salt and organic black pepper, to taste

Preheat the broiler OR prepare the grill (be sure to oil the grate).
Broil or grill salmon for 6 to 8 minutes or until just done.
Mix all the other ingredients just before serving, and spoon salsa over salmon or serve on the side.

Black Lentil Hummus – 21.3g Carbs, 10.1g Fiber, 0.7g Sugar

The idea for this recipe came from a man who sold me organic black
lentils at the farmer's market. "Try making hummus with them," he
said. "It's delicious." Since the GI of lentils is low and they're
high in fiber, I decided to give it a try. And I agree, this is
delicious- it's one of the best dip recipes I've made. I serve it
with carrot and cucumber sticks.

1/2 cup dried black lentils
2 1/2 cups water
1/2 cup Tahini (sesame paste)
2 Tbsp olive oil
2 garlic cloves
1/2 tsp salt
Juice of 1 lemon

Boil the lentils in the water until soft, approximately 40 minutes,
drain and save the liquid.

In a food processor combine the lentils, tahini, garlic, and olive
oil, salt and lemon juice. Blend until smooth. If the hummus is
too thick, add the reserved cooking liquid in small quantities
until desired consistency is achieved. Add lemon juice to taste.

Citrus and garlic glazed grilled chicken.
Prep Time: 10 min
Cook Time: 12 min
Difficulty: EASY

2 whole chicken, raw, cut into 6 pieces (2 1/2 lb each)
6 medium garlic cloves, mashed
1 tsp salt and pepper
1 tsp paprika
1 small onions, cut in half and very thinly sliced
1/2 cup orange juice
1 tsp grated orange peel
1/3 cup chopped parsley
3 Tbsp olive oil

1. Trim any visible fat from the chicken; remove and discard the skin.
Rinse the chicken and pat dry with paper towels.

2. Place the chicken pieces in a nonreactive baking pan, sprinkle with
the garlic, and toss to coat.

3. Season the chicken with salt, pepper, and a generous sprinkling of
paprika.

4. Top with the onions.

5. Drizzle the orange juice over the chicken and sprinkle on the zest.
Sprinkle on the parsley and toss again. Drizzle with olive oil and again
toss to coat the chicken.

6. Cover and refrigerate the chicken overnight or for up to 24 hours.

7. Light a grill or preheat the broiler. Grill or broil the chicken for
about 12 minutes per side, turning once, until the juices of the chicken
run clear.

8. Serve the chicken hot off the grill or grill ahead and serve the
chicken chilled.

DIABETIC HONEY-DIJON CHICKEN

INGREDIENTS

3/4 teaspoon fines herbes or herbes de Provence
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 pound chicken tenders or 1 pound boneless skinless chicken breast, cut
into 8 equal pieces and pounded 1/2-inch thick
1 tablespoon extra virgin olive oil
3 tablespoons thinly sliced scallions or finely chopped parsley

Sauce Ingredients:

1/4 cup plus 2 tablespoons chicken broth
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1 tablespoon honey

DIRECTIONS

Combine the herbs, garlic powder, salt and pepper and sprinkle some of
the mixture over both sides of the chicken pieces.
Coat a large nonstick skillet with the olive oil and preheat over
medium-high heat.
Add the chicken and cook for 2 minutes on each side, until nicely browned.
Cover the skillet and reduce the heat to medium.
Cook for about 3 minutes, turning once, until the chicken is cooked
through.
Remove the chicken from the skillet and set aside to keep warm.

Combine the sauce ingredients in a small bowl and stir to mix.
Add the sauce to the skillet and bring the mixture to a boil over
medium-high heat.
Cook for a minute or 2, stirring frequently, until reduced by half.

To serve, place 2 chicken pieces on each of 4 serving plates, drizzle
with some of the sauce, and top with a sprinkling of scallions or parsley.
Serve hot.

Sorry, I left out an ingredient. Add 1 tbsp. freshly grated ginger to the
vinegar/soy mixture. I prefer to put my grated ginger in a garlic press and
squeeze out the juice, leaving the plant material behind.

If you can't find a commercial one in the Asian aisle of your local
supermarket, you can easily make one with just a few common ingredients:

1/3 c. rice vinegar
1/4 c. low sodium soy sauce
2 tbsp. water
1 tsp. sesame oil
1/2 tsp. sesame seed
2/3 c. canola oil

Combine first 5 ingredients in jar with tight fitting lid and shake well.
Add oil and shake again. Chill until ready to serve. Makes about 1 1/2 cups.
If you prefer a sweeter dressing, add a packet or two of Splenda to taste.

"It's just one of those salads that was created on a gorgeous summer
evening with a bunch of stuff I had in the fridge. Grilled asparagus
is tossed with spinach and Parmesan cheese. My husband and I love it!"

Servings: 6

1/4 cup olive oil
1/8 cup lemon juice
12 fresh asparagus spears
6 cups fresh spinach leaves
1/8 cup grated Parmesan cheese
1 Tbsp seasoned slivered almonds

1. Preheat a grill for low heat. Combine the lemon juice and olive oil
on a plate. Place asparagus on the plate, and roll around to coat.

2. Grill asparagus for about 5 minutes, turning at least once, and
brushing with the olive oil mixture. Remove from the grill, and place
back onto the plate with the oil.
3. In a large bowl, combine the spinach, Parmesan cheese, and slivered
almonds. Cut asparagus into bite size pieces, and add to the salad along
with the lemon juice and oil from the plate. Toss to blend, then serve.
