Chicken Cordon Bleu - 6g Carbs

This recipe was once the ultimate in gourmet dining. The ham-and-cheese stuffed chicken breasts are still delicious in their low-fat form!
Servings: 6

6 boneless, skinless chicken breast halves (4 oz each)
4 oz sliced fat-free Swiss cheese
3 oz lean smoked ham
Flour
2 egg whites, beaten
1/3 cup unseasoned dry bread crumbs
Vegetable cooking spray

Pound chicken breasts with flat side of meat mallet until very thin and even in thickness.
Layer cheese and ham on chicken breasts, cutting to fit.

Roll up chicken and secure with toothpicks..

Coat chicken rolls lightly with flour; dip in egg whites and coat in bread crumbs.

Spray rolls generously with cooking spray and cook in skillet over medium heat until browned on all sides, 8 to 10 minutes.

Place chicken in baking pan.

Bake at 350 degrees, uncovered, until cooked through, about 30 minutes.

Servings: 6
Nutrition per Serving: 210 Calories, 3.9g Fat, 73.2mg Cholesterol, 540mg Sodium, 34.6g Protein, 6g Carbs

Mediterranean Chili - 30g Carbs, 8g Fiber

1 Tbsp olive oil
1/2 cup chopped onion
2 bell peppers, coarsely chopped (1 green and 1 yellow)
4 cloves garlic, minced
1 (16 oz can) no-salt-added chickpeas, drained
1 (14 1/2 oz can) no-salt-added stewed tomatoes, undrained
1 cup low-sodium vegetable juice
1/4 tsp crushed red pepper flakes
1/2 cup (2 oz) crumbled reduced-fat feta cheese
1/4 cup chopped fresh basil

Heat oil in large saucepan over medium heat. Add onion; cook 5 minutes, stirring occasionally. Add bell peppers and garlic; cook 5 minutes, stirring occasionally.

Stir in chickpeas, tomatoes with their juices, vegetable juice, and red pepper flakes; bring to a boil over high heat. Reduce heat to low; simmer, uncovered, 12 minutes or until vegetables are tender.

Ladle into shallow bowls; top with feta cheese and basil.

Servings: 5
Serving size: 1 cup

Chicken with Sun-Dried Tomatoes - 3g Carbs, 1g Dietary Fiber, 2g Sugar

From: Magic Menus for People with Diabetes
Servings: 4

4 boneless skinless chicken breast halves (about 1 pound total), trimmed of cartilage and fat
1/4 tsp salt (optional)
1/4 tsp freshly ground pepper
1 Tbsp canola oil
1 large shallot, minced
2/3 cup low-sodium, low-fat chicken broth
1/2 cup dry white wine
1/8 tsp marjoram
1/4 cup chopped sun-dried tomatoes, rehydrated in small bowl water

Directions

Cut each chicken breast half into 6 equal parts. Sprinkle with salt and pepper.

Saute chicken in oil over moderate heat, turning, until the chicken is just opaque throughout, 4-5 minutes.

Remove chicken with a slotted spoon. Add shallot to the skillet and sauté, stirring until softened, about 1 minute. Add broth, wine (much of the alcohol will evaporate, leaving only the flavor), marjoram, and tomatoes.

Bring to a boil over moderate heat and cook, uncovered, for 5 minutes, stirring occasionally.

Return the chicken to the skillet. Simmer, gently spooning the sauce over the chicken, until heated through. Simmer until sauce is reduced by half.

My youngest son (mid 30s) is on the Keto diet.  Very restrictive.  I keep pink Himalayan sea salt in stock for him as that is needed on that diet.

Gazpacho is a savory cold soup and you can add chicken to it if you want.  
Often it is garnished with cheese.  

I like a spicy version so add a little chili.

Some flavors that may work are

Strawberry and Basil.

Pineapple and Cayenne (this is a favorite in South America)

Sundried Tomato and Basil

Lemon Dill

Basically you are using the normal protein recipe and adding some flavoring to change the taste.

I find a lot of those are very high in salt.  Which is as bad as too much sugar.

You can get a savory bone broth protein powder. That way you could blend in spinach or other veggies for more of a savory meal replacement. You could have it hot so more of a nice hot meal replacement. If not then you could buy a non flavored protein powder and use it with vegetable juice or chicken broth and add in your veggies and stuff.
