Slow Cooker Tomato Spinach Soup (WW)
10 oz baby spinach, washed
2 medium carrots, chopped
2 medium stalks celery, chopped
1 large onion, chopped
1 clove garlic, minced
4 cup low sodium vegetable broth
1 can (28 oz) diced tomatoes
2 bay leaves
1 tbsp dried basil
1 tsp dried oregano
1⁄2 tsp crushed red pepper flakes
Place all ingredients in a slow cooker. Cover and cook on High for 5
hours or Low for 8 to 10 hours. Remove bay leaves, stir, and serve.
