Hearts Of Palm Salad - 4g Carbs
From: American Diabetes Association Holiday Cookbook by Betty Wedman
Serves: 4
16 oz can of whole hearts of palm
1 small sweet green pepper, chopped
2 oz jar sliced pimientos, drained
1 celery stalk, chopped
2 green onions, sliced thin
1 Tbsp chopped fresh parsley leaves
2 Tbsp extra virgin olive oil
1/4 cup lemon juice
Lettuce leaves
Drain the hearts of palm and cut them into bite-size pieces. Add remaining ingredients except lettuce leaves. Cover, refrigerate overnight. Serve on lettuce leaves.
