Even lifelong Brussels sprouts haters love these! For a heartier dish, sometimes I add crumbled bacon. —Jan Roberts, San Pedro , California
Servings: 2
Prep/Total Time: 30 min
 
1/2 lb fresh brussels sprouts
1 1/2 tsp olive oil
1 1/2 tsp lemon juice
1/4 tsp salt
1/4 tsp garlic powder
Dash pepper
1 Tbsp shredded Parmesan cheese
 
Cut an "X" in the core of each brussels sprout. Place in a shallow baking pan coated with cooking spray. Drizzle with oil and lemon juice; sprinkle with salt, garlic powder and pepper. Bake, uncovered, at 400° for 20-25 minutes or until tender, stirring once. Sprinkle with cheese.
 
Servings: 2

Cinnamon Garlic Chicken - 11.4g Carbs, 2.6g Fiber, 5.2g Sugar

Cinnamon and garlic combine to create an incredible flavor in this recipe worthy of a fine restaurant. As a bonus, cinnamon may also help you control your blood sugar!

3 boneless skinless chicken breasts, cut into bite-size pieces
1/4 tsp salt
1/2 tsp ground cinnamon
1/4 tsp pepper
3 garlic cloves (2 minced and 1 peeled and left whole)
1 Tbsp olive oil
1 onion, coarsely chopped
1/4 cup dry white wine (you can substitute chicken broth if you didn't have wine)
1 cup water
3 oz. tomato paste
2-3 cups spinach leaves, roughly torn
1/2 cup grated Romano/Parmesan/etc. cheese

Mix the salt, cinnamon, and pepper together.

Rub the mixture on the cut up chicken pieces to completely coat them.

Heat the oil olive in a large, skillet with a lid over medium-high heat.

Add the chicken and cook until it is no longer pink.

Remove the chicken from the skillet and set aside.

Add the onion and minced garlic to the skillet.

Cook until the onions are soft and beginning to brown.

Add the wine and scrape any browned bits from the bottom of the skillet.

Let the wine cook until it is evaporated.

Add the water, tomato paste, whole garlic clove, and chicken to the pan.

Reduce the heat to low, cover and let simmer for about 20-30 minutes, until the chicken is tender.

Add salt and pepper if needed (I don't add any). Mix in the spinach leaves and cook until wilted.

Servings: 3

" Cauliflower rice" is simply cauliflower that is grated down to be rice-like in texture. You can make it yourself from fresh Cauliflower or buy it. Now it comes already made like this in fresh (fresh produce section) or frozen.
This is done to replace carbs from rice in dishes for those who need low carb diets.

I am not Chef Gloria but can answer; it's whole cauliflower that has been 'riced' (cut in rice-sized pieces); it's a very popular method now and is even available already riced at some stores (like Trader Joe's). It's low carb and a great alternative to flour or actual white rice.

As for high fat content - not all but many diabetics eat very low r no carb diets and are then not so concerned with the fat contents of the meal. No carb or ultra low carb diets are referred to as ketogenic. There are quite a few studies now that reveal high fat content, when combined with little carb, does not result in high cholesterol!

Add in the garlic, almonds, raisins, curry powder and cinnamon. Stir until combined well and cook for another minute.

Increase the heat to medium-high, add the other tablespoon of oil, and dump in the cauliflower. Cook for 3 to 4 more minutes, stirring frequently, until it's softened but not mushy.

Remove from the heat, and stir in the cilantro. Check flavor and add salt and pepper to taste.

The squash kefir cakes are nice and have a fluffy, light texture, and are deliciously good for your breakfast.
Time: 20 min  
Servings: 12

3 cups squash, yellow
3 eggs, beaten
1/2 cup kefir
¾ cup almond flour
½ Tbsp baking soda
1 Tbsp sea salt
Olive oil

Combine salt, almond flour, and baking soda in a bowl stir thoroughly before adding eggs. Stir in squash and kefir. Add a little oil in a skillet and heat over medium-high heat.

Pour about 1/4 cup of the mixture on the pan and cook the first side for 2-3 minutes or until golden, flip over to the side and cook for until golden. Repeat step (2 and 3) for the remaining dough. Serve and enjoy.
